• 2 T. Butter
  • 4 Cups Sliced Yellow Squash
  • 1 Medium Onion, Chopped
  • 2 Eggs, slightly beaten
  • 1 Cup Shredded Cheddar Cheese
  • 1 Cup Milk
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 sleeve Ritz Crackers
Preheat oven to 350 degrees.

Slice squash into 1/4 to 1/2″ slices.  Add squash and onion to lightly salted boiling water.  Cook until tender.  Drain.

In a large bowl, mix eggs, cheese, milk, salt and pepper. Combine with squash and onions mixture.

In a separate bowl, mix Ritz cracker crumbs with melted butter.

Put squash mixture into 9 x 13 casserole dish, sprayed with cooking spray.  Top with buttered Ritz cracker crumbs.

Bake for 45 minutes or until top has lightly browned.
